Back to school time is here. We all know that can be a very busy and expensive for families. With our economy not doing so good now, stretching the food budget is particularly important that the money is spent on school fees, clothing, athletic fees, even glasses for children. Here is a menu that is tasty, inexpensive and easy for busy, and other working mothers.
Swiss steak Slow Cooker or Crock Pot is ideal for busy families. It has beef, potatoes, carrots, tomatoes and if you have your meat and vegetables to a dish. Add a salad of cucumbers and onions Tangy a bit of crunch and flavor. For a quick and tasty dessert try our Mini Cherry Cheese.
SWISS dinner Steak CrockPot
1 1 / 2 lb. beef round steak cut into 6 pieces
1 / 4 c. salt
1 / 8 teaspoon pepper black
8 new red potatoes, washed and cut into quarters
Set 1 lb. baby carrots
1 med onion, sliced
1 can diced tomatoes with Italian, undrained
1 jar beef gravy Homestyle
fresh parsley, optional
Spray a frying pan 12cm non-stick cooking and heat over medium-high. Sprinkle with salt and pepper on the meat. cooking meat 6-7 minutes, turning once, until browned.
Layer potatoes, carrots, onion and meat in 4-5 Cooker QT or slow cooker. Mix with tomato sauce and coat the meat in slow cooker. Cover and cook on low heat for about 8 hours or until Meat and vegetables are tender. Sprinkle each serving with chopped parsley, if desired.
Makes 6 servings.
It is a good recipe for diabetics because it has a high carbohydrate protein ratio. Per serving: 27g protein and 20 grams of carbohydrates.
Salad cucumber sour ONION
1 cup fat free sour cream
2 v. tablespoons cider vinegar
2 v. juice soup lemon
1 / 4 c. salt
1 / 8 teaspoon pepper
3 large cucumbers, peeled and chopped
1 small onion sweet, thinly sliced
In a large bowl, combine sour cream, vinegar, lemon juice, salt and pepper. Add cucumbers and onions toss to coat. Cover and refrigerate at least 1 hour before serving. Use a slotted spoon for serving.
CHERRY Mini Cheesecakes
1 pack of 6 mini tart shells Graham cracker
1 (1 oz) package sugar-free instant pudding mix fat free cheese
12 c. to table without sugar added cherry pie
6 c. tablespoons sugar free whipped topping, optional
Prepare pudding mix according indications of the package. Fill pie shell mini about two thirds full (which leaves some pudding left over). Top pudding with 2 tablespoons of filling pie by pie. Refrigerate until serving. Garnish with a tablespoon of whipped topping, if desired.
Variations: Use a full-size pie to make a cheesecake normal size.
Use different pie fillings to suit your taste. blueberries fisheries, etc. are also good.
